Since the invention of instant noodles in 1958, this global food is consumed 100 billion servings annually. Our solution covers both instant noodle components: the dried noodle and flavoring.
Our technical experts understand the importance of shelf life in instant noodles. After the dehydration process of the noodle dough by frying in oil at 140-160˚C for a minute or two, water is dispelled while oil is absorbed. Kemin's solution delays rancidity in the dried noodle, impeding free radical scavengers and causing oxidation due to its higher lipid content.
Similarly, snacking products that underwent an extruded frying process experience rancidity over time.
