In the olive oil production process, one of the underutilized resources is the fruit juice that is extracted from the olive oil. That fruit juice contains a mixture of polyphenols with antioxidant activity that can be developed in a way that's considered both economically and environmentally sustainable.
Using the biomass in a circular way promotes less waste materials from the olive extracts. These olive extracts are particularly rich in polyphenolic compounds, such as hydroxytyrosol, tyrosol, and oleuropein.
